INGREDIENTS:
- 1/2 cup vegetable oil
- 1 1/2 cups granulated sugar
- 1tbsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 3 cups finely shredded zucchini
- 1 1/4 cups semi-sweet or dark chocolate chunks
INSTRUCTIONS
- preheat oven to 350*f
- prepare 9x13 pan (remember to spray pan)
- combine all ingredients into a large bowl
- once zucchini is added allow the batter to set for about 5-10 minutes (zucchini will add moisture)
- i will usually add a little extra vegetable oil after the batter is mixed together if i don't think the zucchini added enough moisture (it won't look like batter from a box it will be a little more thicker)
- spread brownie batter into pan and add more chocolate chunks on top of batter
- bake for 25-35 minutes (i stick a toothpick in the brownies to see if they are done, no batter should be on toothpick once removed, it should be crumbly)
